Mind you, it isn't a desire to save animals that induced me to become vegan. I was more interested in saving my own life. After reading The China Study by Colin Campbell I became convinced that, right or wrong, cancer thrives on animal protein and eating a Big Mac was analogous to tossing a side of beef to a cage of starving lions, Weight, cholesterol, and blood pressure control are no longer a problem and I eat like the proverbial pig; but then, of course, most pigs are vegan.


However if you'd feel better with some righteous means to lord it over meat eaters here's a few:

If I could show that the lives of a hundred children could saved by simply adopting a vegetarian diet for a year, I imagine most Americans would be willing to give it their best effort. The absurd reality is that starvation could probably be eliminated from the earth, saving hundreds of thousands lives each year, if only every American would just give up eating meat. It takes more than 2,400 gallons of water to produce 1 pound of meat, while growing 1 pound of wheat  requires only 25 gallons. You save more water by not eating a pound of meat than you do by not showering for six months! A totally vegan diet requires only 300 gallons of water per day, while a typical meat-eating diet requires more than 4,000 gallons of water per day. 
According to Greenpeace, all the wild animals and trees in more than 2.9 million acres of the Amazon rain forest in Brazil were destroyed in the 2004-2005 crop season in order to grow crops that are used to feed chickens and other animals in factory farms.
(That's over 4500 square miles of co2 absorbing, oxygen producing forest.) If you're having a hard time wrapping your mind around this statistic you may be suffering from a lack of oxygen.

If you insist on eating animal protein, you should write an apology to your grandkids since it will not be available to them, if they have anything to eat at all. Projections are for the US population to double in the next 70 years. And remember, chances are that that sirloin steak will be grown a thousand miles from where they're going to consume it. Try filling the tank on that truck 50 years from now.

  For every 1 kg of high-quality animal protein produced, livestock are fed about 6 kg of plant protein. The amount of fossil energy required for meat production runs about 10 to 1 over a vegetable diet.
